Description
Our Medium coffee is from the region Cajamarca in Peru's northern highlands, in the Andes Mountains. We source from the cooperative Rutas Del Incas. The coffee grows at altitudes of up to 2,400 meters, which is considered extreme. It is not an easy feat, but it pays off with lower acidity and round flavor notes.
Founded in 2013, the Rutas Del Incas cooperative has distinguished itself among coffee in Peru for their commitment to quality and excellence. Most of these farmers live in remote and inaccessible mountain villages composed of indigenous Incan people. Despite their remoteness, the coffee they produce has gained international attention from the coffee community for its superior quality traits.
The producers in this cooperative are processing their coffee cherries in small mills near their houses. With agricultural assistance and guidance from the cooperative, the results are phenomenal, with clear caramel and toffee tones dominating the cup. The cooperative has allowed hundreds of smallholders to see premium prices for their labor and diligence genuinely. The agricultural assistance given is helping producers see higher yields of coffee cherries year after year.
