- Avoid Decaf – Caffeine is a mycotoxin inhibitor and as such, can prevent the fungi from growing out of control
- Climate – Coffee beans grown in high elevation are less likely to contain mycotoxins. Fortunately, most high-end coffees will be grown at higher elevations
